I was wondering if this solar panel sheet is flexible or not. I cannot seem to find any guidance in the datasheet or description. Any insight would be great.

Most solar panels/cells are made of crystalline materials that will crack/shatter if bent significantly, so unless specifically stated as such the default should be to assume that any given item is not flexible.
Another indication is the indicated thickness of the item in the dimensional drawing: a flexible cell would typically need to be made as a film much less than ~2 mm thick in order to tolerate bending without damage.
