What do I need to order to stack these boards? Also what is required to snap the controller on?

Welcome to the DigiKey TechForum. The maker has listed the bill of materials for the project here. The board stack is not an orderable part, it appears these were 3D printed.

You may be asking what’s the part number for the black stacking headers (2 per board). I found this but it’s not something I have in my hand to be sure.

Aha, there’s more! the lowest board in a stack can have shorter pins. Different part.

And the ESP32S3 needs “not header” pins (not included although you do get an antenna apparently), which I think every tinkerer should have many of in their parts boxes - 50 pins and you break off a 7-pin size or whatever else you might need.
On second thought the longer pin headers are cheaper so just get a few extra, and cut the pins after soldering.
