For Omron model E2E-X5B1D18, can the connector/cable termination be cut off and the sensor be used with free wires (flying leads) instead? In other words, can we remove the IO-Link termination and wire it directly as a standard sensor?

Hello,

Yes this will still function without the connector, you can follow the color guide on page 45 of this datasheet to confirm the pinout of the wire leads.
