Is it possbile to get the current readings for HPF3K0PS60 throu one off the interfaces (PMBus, CANopen, MODBUS, and SCPI) onto my PC using a custum script, and not the GUI from the manufacturer?

Yes, the communication allows you to monitor and adjust the output voltage and current.
On page 3 of the Datasheet, under the Signals & Controls section, it says: Analog to digital monitoring accuracy: Vout monitor accuracy is ±0.1% of nominal voltage. Iout monitor accuracy is ±0.1% of full load. Vout and Iout setting accuracy is ±0.1% of nominal voltage/full load
