Does this particular fan have the IP68 rating? Because the brochure states it as optional.

No. This specific part number, 8315100142, does not have an IP68 rating.
Its standard protection rating is IP10.
Why the brochure says “IP68 – optional”
The AxiForce series brochure lists IP68 as an option because ebm‑papst offers factory variants (or configurable options) with enhanced sealing. However, IP rating is tied to the exact orderable part number, not the generic series name.
OK, so what is the correct part number for the equivalent IP68 rated fan ?

The datasheet’s statement:
“Degree of protection up to IP68”
means that ebm‑papst can supply specially configured AxiForce variants with IP68 sealing, but the IP68 version has its own order code, and that order code is usually assigned through ebm‑papst sales/configuration (custom part number) rather than published as a generic replacement.
Would it be possible to purchase this custom configuration through DigiKey or does it have to be handled directly with ebm-papst?
