The Molex premo-flex series 15011 data sheet shows the pinout for differential signals, and the data sheet says that the impedance is 50 ohm single ended. I’m assuming that signal - gnd - signal - gnd - . . . yields 50 ohms and would like to confirm.

I believe your instinct is correct, single line typically is measured from one signal line to the closest ground reference while a differential is between different signal lines. Unless stated otherwise in that specification sheet, I think it’s fair to go by that.
