Are there any suggested adhesives for mounting this to an enclosure?
To my knowledge an adhesive is not necessarily recommended for this device. If you take a look at the install guide from Raspberry Pi (linked here), page 4 of the document shows where the mounting screws should be positioned. There is one set for attaching a Pi to the screen, and another set for attaching the screen to a panel or enclosure.

Agreeing with @chris_groom that it is generally not intended to be mounted with adhesive.
However, I believe something like double-sided 3M VHB tape would work fairly well to secure it to a flat panel without using mounting screws if you feel you need to do it that way.
Page 5 of the Product Brief will give the dimensions to help with that. It looks like the narrowest width surface on the rear of the display is about 6.45mm.
Thank you for the insight! While I do see that the install guide does not call for any adhesive, we are going to try the 3M tape with the hope of some slight IP.
