Will this Radar Sensor Module monitor the respiratory rate of a sleeping subject? If not, does DigiKey offer any radar modules that do accurately monitor the respiratory rate of a sleeping subject?

Radar sensors of the type can be used to realize high-level functions such as non-contact respiratory monitoring, however the data returned by most is simply distance information with some specified structure. The matter of transforming the information returned by the sensor into the higher-level information desired is a task left to the user.
I am not aware of any items among DigiKey’s listings that directly perform the function requested.

As @rick_1976 points out, we do not carry any radar products that are specifically designed for respiration measurement.
However, we do carry product which could conceivably be used for such an application. For instance, as referenced here on the Acconeer website, they give information about developing such an application using their A121 sensor.
