initially though of ordering this model “880-XK-AUDIO-216-MC-ABL-ND” but it is EOL so thought of ordering “880-XK-AUDIO-316-MC-AB-ND”
I would like to know the model differences between 880-XK-AUDIO-316-MC-AB-ND & 880-XK-AUDIO-216-MC-ABL-ND and want to know whether 880-XK-AUDIO-316-MC-AB-ND supports 8 channel USB audio recording or not

some of the differences I found between these 2 boards are that the XK-AUDIO-316-MC-AB has a higher operating frequency on its ADC and DAC then the XK-AUDIO-216-MC-ABL.
The XK-AUDIO-316-MC-AB does not have USB A port only a micro–USB B port and it also has less user defined LED then the XK-AUDIO-216-MC-ABL. There are also some slight differences in the physical size of the boards and the I2C addressing.
Also, yes XK-AUDIO-316-MC-AB can support 8 analog audio inputs.

Looking at the Hardware Manuals for each:
It looks like the XK-AUDIO-316-MC-AB can handle up to 32 simultaneous USB audio channels using the newer xCore.ai series XU316 chip versus the older xCore-200 series XE216 chip.
From XK-AUDIO-316-MC-AB manual:
As for overall comparison of features, I’d refer your to the above manuals for further comparison. In general, it looks like the xCore.ai series is the product of choice for new designs.
Since 880-XK-AUDIO-216-MC-ABL-ND is not avaiable to procure, I can go ahead with 880-XK-AUDIO-316-MC-AB-ND board. could anyone confirm? as I mentioned would like to do USB 8 channel audio recording. Hope 880-XK-AUDIO-316-MC-AB-ND board supports USB 8 channel audio recording.

The DATASHEET says this board has 8 analog inputs, and 8 analog outputs.
It also says it is a complete hardware and reference software platform providing more than 32 input and 32 output channels simultaneously over USB using the USB Audio Class.
Please check the datasheet for all the information on this board.

- How to get the drivers for this XK-AUDIO-316-MC-AB HW to detect at the USB host undertest which is Android OS HW?

Checking the datasheet would be a good source of information.
They do not list any test procedure for validating the available channels.
For configuring, it says: The 8 analog inputs are routed to two 4 channel ADCs (PCM1865). The ADCs are configured to output digital audio over I2S or TDM. Configuration of the ADCs is via I2C.
Searching for “Detect”, is only references the Vbus Detection, and says: The Vbus detection circuit uses a bipolar transistor to detect the presence of Vbus and output this as a 3.3V logic signal.
I found nothing for UAC on the datasheet.
Maybe one of the engineers will know more about this, and can help you further.
