may we know if the material of this item is stainless
and is there 100 v instead of 120 V

Hello mzrgensales and welcome to the DigiKey TechForum.
I do not see Stainless Steel called out on the datasheet, but I do see that the emitter pins called out as tungsten.
I was able to find the options linked HERE that state they would work with 100VAC.
