Honeywell discontinued their bimetal disc thermostat line a few years ago. I am hoping to find a replacement that is 5A@28VDC compatible.

That seems to be a common problem with industrial controls. The machinery can run for decades, yet replacements parts can be hard to source.

If you don’t find an in-kind replacement, you could replace this functionality with a tiny PLC and a sensor. Here the term tiny implies that the PLC will perform the single function associated with a particular sensor, specialty relay, or cam contactor. If necessary, this tiny PLC could even feed a signal to a larger PLC.
Perhaps, it’s not an ideal solution but it could restore your mechanism with minimal cost and effort. For example, consider these small PLCs. Depending on the modification it could make machine testing and recommissioning easier.
