Looking for a solution to controlling an electric circuits that consist of a heater and a thermocouple using processor: as the thermocouple detects a certain critical temperature, the processor shall drive electric current and thus turn on the heater. I am not familiar with the mechanism of processor or signal processing. Any help or suggestion is very appreciated!

To do the heavy lifting of not having to program much or design an electrical system beyond setting temperature thresholds I would advise taking a look at our product category. Click here for Controllers - Process, Temperature
These are devices that have a temperature probe input and have mechanical or solid state relays to turn things on when certain set temperatures are reached. It would cut down on electrical engineering design.
