Can DK Red do ground planes, and if so, how? My old pro-level board house would have me generate a gerber to invert & merge with pads and traces for the bottom side.

For a ground plane, I believe you’d have to have a PCB design that is > 2 layers. At this time DKRed only offers 2 layers, but other board houses do offer additional layer options.
