Hi, I couldnt find the info on the data sheet but what is the voltage/power requirement for this pressure pad as well as the sensitivity?

These are designed to provide a resistance change to a microcontroller, where the resistance can be calculated to the related force being present on the sensor. There is no voltage/current rating, as it is not intended for that purpose.
The long term drift is <1%, the Single part repeatability is 2%. Please check the datasheet for the tolerance information.
