I am looking for adjustable power supply that can supply up to 20V, 18A and have output shutdown functionality using external contact preferably linear power supply. I want the output of the PSU to be off whenever the interlock is open.

Many have options for remote control by various means, though it is not uncommon for items such as the 382276-ND (see manual here) with a contact-closure enable function to be on when the contact is open.
One may also consider the possibility of using an external relay or similar to implement the desired control function externally to the supply chosen.
