DigiKey specifies Vout to be 3.3V for this part, but I can’t find on the datasheet where it says that. It gives a range of 1.2V to 3.6V, but I’m not sure if that means a tolerance or just different parts in the same series (probably this one). Does this part regulate to 3.3V?
I also just noticed that the Pin distribution has a lot of inconsistencies. Which pin does what?

Well, the datasheet for this part is woefully inadequate. It does not specifically state what the voltage of the SL6206-33NR is.
However, based on the part numbering for the various parts within this SL6206-xx family of parts, I can pretty confidently say that the “33” in the part number “SL6206-33NR” refers to 3.3V

It is not clearly spelled out, but the datasheet lists the number as SL6206-XXNR.
The XX is for the output voltage. So SL6206-33NR, is for 3.3V.
You can compare the part number to a couple examples, like SL6206-30NR, which has a 3.0V output, and SL6206-36NR, which has a 3.6V output.
I did not find an example for the adjustable part number with the NR ending, but you can look at SL6206-ADJMR, for an example of an adjustable one, and how the part number changes.
Oh yeah, the pinout. Also a big failure for them.
They failed to label pin 3 in their diagram, and I’m pretty certain that they mislabeled pin 1 in the table as “CE”.
Since a 3-pin part can not have a CE (chip enable) pin, pin 1 can not be CE. Therefore it must be GND, as it is labeled in the SOT-23-3L image.
That leaves pin 3 as being Vdd, as it is listed in the table, but not in the diagram.
This is my best assessment, based on the given datasheet. If you want to have greater confidence in the reliability of the datasheet regarding reflecting the actual functionality of the part you are intending to use, we have many other similar linear regulators available here.
