While looking at ST’s IRF630 information on DigiKey (P/N: 497-2757-5-ND) I can see some discrepancies between provided datasheet and DigiKey’s descriptions, for example quite a difference in Ciss: 370pF vs. 700pF respectively.
Maybe there’re different versions of this product?
I’d like to know which one would I receive?

Close inspection would indicate that the parametric values on the DK site are maximum values, while those appearing on the linked datasheet are typical:
The most likely explanation is that one of the 9 prior versions of the datasheet released at the time the part was added to the listings showed these higher maximum values.
One subtle nuance to be aware of is the only values listed as “maximum” or “minimum” in the tabular portion of the datasheet constitute a product specification. “Typical” values are considered advisory only and usually relate the middle of the distribution of a given product attribute.
As such, while most examples of the product should exhibit a Ciss value around 370pf, an outlier with an input capacitance of 370 Megafarads would not be considered out of specification, because there is no quoted maximum figure for that attribute.
