I’m looking to implement a cooling device (likely a Peltier-based Air conditioner fed with 12vDC) for equipment that overheats when exposed to the sun.
I want this cooling device to receive power whenever the temperature exceeds 15 degrees C.
Will the following component, placed inline, do the trick or are there better alternatives?

Thank you for contacting DigiKey Technical Support.
I think you want a normally open switch NO, instead of a normally closed switch.
Part number 317-1489-ND will activate the cooler as long as device sensor is over 15C and it will be off on temperatures below 15C.
