I am designing a controller to control 4 reversible DC motors and considering this Toshiba part. I don’t see min/max current specified for the INA/B/1/2, PWMA/B, TBLKAB or OSCM pins. Are these covered by the ‘Logic input voltage’ and ‘Logic input current’ in the datasheet? Is there any documentation for connecting this device to an ESP32?

Yes, the characteristics of the logic input pins are described by the “Logic input” specifications.
Since devices of the type are capable of being controlled by any of perhaps a million others, it’s uncommon for manufacturers to provide device-specific examples or guidance for doing so, outside of any example/evaluation platforms that may be offered.
Note the the manufacturer’s product page for the device offers additional information including an app note and documentation for the available evaluation board which may be helpful.
