Hello,
The connector in the forefront from a Mintron Camera has an outside of 2mm * 4mm and is two pin.
The connector near the NTSC sticker is two pinned and 3.40mm * 4.20mm.
I figured one was a UART connection but am clueless so far.
Does your company have connectors of this size and shape that are each two pin types?

Thank you for contacting DigiKey , I have looked through our connector selection and I am not finding these connectors . Is there any markings on the headers that may help us identify them ? What is the pitch of the contacts center to center ?

3.40mm * 4.20mm = 2mm pins
2mm * 4mm = 1mm pins
For the above dimensions, those are outside dimensions for the square type connectors.

Sir, I think this version and this is an older, unsupported type of non-Open Source hardware/software.
The company, Mintron, does not even list this type of camera under their website online.
I have looked for different types of data relating to the Mintron in question but I have fallen short.

P.S. The connectors, although older, may have a newer form factor that can be fitted well enough

Though less certain about the other one, it looks quite a bit like this guy:

Yes, if you scroll down the page on the links I gave you, the mating connectors are listed. From the mating connector listed, there will be links to the contacts required for them. You’ll note that the crimpers designed for these contacts are seriously pricey.
If possible, I’d recommend using the pre-assembled housings with wires attached. That will save you time and $$$.
Oh, and for the first connector, it looks like Molex makes what appears to be a compatible part in the Picoblade 1.25mm 0533980271.

The advantage for this one is that we do have some pre-assembled cable assemblies with the mating connector already attached. Specifically, part number 0151340205.
