When looking at my Schematic all of the symbols have labels like U1 or R1, R2 etc. Is there a way to remove these symbols?

If you click on the individual symbols in the schematic you should have your part properties box pop up on the right side of your screen. If you uncheck the small boxes on the far right these properties will not show in your schematic. You can also check the unchecked boxes to add more details/values to the individual symbols.
