Hello I want to use Triplett MS 100 to check moisture in dehydrated banana slice. is it right device to use? please guide.

Welcome to the DigiKey TechForum. This device is listed for use in reading moisture levels of wood and other building materials. I feel like it may be a challenge to find a moisture meter made specifically to test dehydrated bananas but the meter probably doesn’t care what the material is, wood or banana. This meter should give you a good reading of moisture content as long as the moisture level is within the range the meter can detect.
